La rou literally means ‘wax meat’, and is also known as Chinese preserved bacon. It’s incredibly flavourful and keeps forever. Sadly, it’s near impossible to find in stores. ;_;
Xiang Chang sausage is a very sweet and coarse sausage, and can be found in Chinese supermarkets (vacuum packed, sometimes refrigerated). I cook it by steaming it with the rice, and like adding it to stir-fries.
